Weeknight Dinner Recipe: Thai Inspired Ground Turkey and Spinach

I have a confession to make…I started the Whole30 and then quit a week into it. I know, I know, how dare I! First, let me back up and give you guys some back story. About two months ago, my mom decided to do the Whole30, by the book, the entire 30 days, everything, all of it. And she did it. How amazing is that?! I honestly don’t know how she did it. She’s determined as heck! So, about a month ago I decided that I was going to start the Whole30 on May 2nd. My mom came out to visit for about a week right before I started, so when she was out here we meal planned, went grocery shopping, and just tried to get my mind right (lol).

The day after she left, I started. And let me be honest with you guys…it was horrible. For me, it was horrible. My mom said it wasn’t really that bad and that after a couple days she got into the swing of things and it was pretty easy. But that wasn’t the case for me…I just love food too much!! I love going out to eat, going to farmers markets, baking cookies…all of it! (Before I keep rambling, if you don’t know what the Whole30 is, here is their website if you want to take a look).

To sum it up, the Whole30 is a diet that essentially restarts your entire system. It is supposed to retrain your brain and it’s relationship with food. You can’t snack, you have to eat certain portions of certain food groups every meal and you can’t have added sugar of any kind. So anyway, to make a long story a bit shorter (because I feel like I’ve been talking forever!) I love food and so after a week in, I quit.

I eat pretty healthy most of the time anyway and I really wasn’t doing it to lose any weight. While I was on the Whole30, I made a lot of recipes from their cookbook and all of them were actually delicious…really flavorful and pretty easy to make. So I wanted to share with you guys one of the recipes that I made! I did put my own twist on it (lol I sound like a master chef saying that!) and I think you guys will really enjoy it. When I made this, I also cooked a sweet potato to go along with it because just having the turkey and spinach didn’t fill me up. The sweet potato kept keep me fuller longer, it’s a healthy side dish and it’s super tasty!

Um, yum! Am I right?! The turkey is flavored with Whole30 compliant boat fish sauce and coconut aminos (which are substitutes for soy sauce!) The turkey also has red pepper flakes and is sautéed in coconut oil…yum!

You could even double this recipe and have it multiple nights! The Whole30 can get super expensive because you’re buying tons of food every week…so the trick is to make enough of each meal so that you can have it multiple times!

I’ve come to the sad realization that I hate lunch. Nothing about it excites me. I never know what to have and healthy salads just don’t fill me up. On the other hand, I love breakfast because I can have pancakes, waffles, eggs benedict, etc and I love dinner because there are so many amazing options and I get to look forward to dessert afterwards! For as long as I can remember, I’ve struggled with finding things to eat for lunch. I want something that’s super tasty, something that will fill me up (but not too much) and something that I can have other things with…like almonds or avocado toast or (if I’m being unhealthy) chips. Can you tell I’m high maintenance when it comes to lunch??

Easter Rice Krispie Treat Birds Nests

“Hoppy” almost Easter everyone! Easter is one of my favorite holidays (besides Christmas and Thanksgiving). I love the all the pretty pastel colors, the candy, the family time, and the cute outfits. Every year on Easter morning (yes, still to this day even though I’m 24), my mom hides our Easter baskets and writes us a poem…a poem (usually containing the phrase “hop out of bed”) that will help us find where our baskets are hidden. Even though I’m not a kid anymore, it’s still a really fun family thing to do and I look forward to it every year!

Is there anything better than a classic chocolate chip cookie?! Well I’m here to tell you that, yes. Yes there is. It’s a chewy, gooey, chocolate chip cookie. Honestly, these are better than your Grandmother’s recipe. I’m sorry if I’m being a bit dramatic…I’ll try to tone it down…let’s start again.

You haven’t lived until you’ve tried one of these cookies. There, is that better?

I usually don’t get this hyped about a CCC but these are the best I’ve ever had. They’re super simple to make and they keep for a decent amount of time too. So, if you like chewy and gooey cookies, these were made for you. Now, throw on your cutest apron and grab a spatula cause you need to get baking…ASAP.

Classic Pumpkin Bread

When I think of Fall and Winter I think of pumpkin bread. For as long as I can remember I’ve always (or my mom has always) made pumpkin bread during this time of year. Some years I make pumpkin bread almost every other week. I wouldn’t go as far as to say I’m obsessed with pumpkin bread…well no, actually I would go as far as to say that. In fact, for my college essay I compared myself to pumpkin bread… Now, I’ve tried a few different recipes and this one that’s listed below is by far my favorite. This recipe makes bread that is (excuse this word) moist, and full of sweetness and fall spices. What could be better?! You only need one bowl for this entire recipe and it takes all of 8 minutes to whip together. I did halve the recipe so it usually makes 2 loaves. Candy Corn Cupcakes

How stinkin’ cute are these?! Candy corn is pretty much the symbol of fall/halloween so I figured this would be a perfect dessert to make! Don’t worry…they don’t actually taste like candy corn, they just look like candy corn (I know a lot of people don’t like the actual taste of the candy). You can actually do this for almost any kind of dessert (if you don’t like cupcakes)…you can make a cookie, cheesecake, maybe even brownie (?) form of these. I made a classic vanilla cake and vanilla icing cupcake (my favorite) and just dyed the batter orange and yellow! If you’re having a party, these would be the perfect thing to make. Or if you’re not throwing one, just make them for yourself (which is exactly what I did) and get started on that winter body!
